Tilapia with Italian Herbs and Vegetables


  • 2 tsp olive oil, divided
  • 1 8 oz pkg. mushrooms, sliced
  • 1 Tbsp Gourmet Garden Garlic
  • 1 cup grape or small cherry tomatoes
  • 3 green onions, thinly sliced
  • 2 cups snap peas
  • 3 Tbsp Gourmet Garden Italian Herbs
  • 4 6 oz Tilapia Fillets
Method SERVES 4

Step 1
Heat 1 tsp. olive oil in skillet. Add mushroom; cook 4 min. to release liquid. Add tomatoes, onions and Gourmet Garden Garlic; cook 5 min. until tomatoes start to soften. Add snap peas, cover; cook 5 min. or until snap peas turn bright green and are tender. Stir in green onions. Remove vegetables from skillet; keep warm.


Step 2
Coat fish fillets evenly on both sides with Gourmet Garden Italian Herb Blend. Heat remaining olive oil in skillet. Add tilapia fillets; cook 3 min. per side. in two batches.


Step 3
Serve Tilapia with warm vegetables.
